The basic combination of chickpeas, tahini , garlic and lemon is tasty enough on its own, but there are many variations. It might sound a little strange, but hummus is traditionally eaten with large slices of raw, sweet onion, which are dunked like a piece of pitta — delicious.

A simple pastry shaped a little like a boat, khachapuri is stuffed with plenty of cheese and topped with a fried egg. Vendors tend to offer a variety of toppings in Israel, too, filling the pastry with beans for a vegan option or going all-out with prawns, squid and garlic butter.

The combination of fluffy pitta, crisp pancake, soft potato, rich egg and fresh vegetables is something to behold. Kebabs — especially those slowly rotating on a spit — have a pretty dire reputation in the UK, but Israeli shawarma is a completely different beast. Usually made from lamb but chicken , turkey and veal are also used , fatty cuts are piled high on a vertical spit and grilled over hours, with pieces being shaved off to order.

Expect plenty of salad, vegetables, hummus, tahini and pickled turnips as well as amba, a sauce made from pickled mangoes and chillies. It was originally a dish eaten by Iraqi Jews on Shabbat morning, but has now become a popular daily staple. It is fantastic bread that is sweet, delicious, and wonderful stuffed with tasty things, or served with butter etc. We had challah that was homemade during our lovely meal with a local family, the Shtaif family, which was set up through Betzavta.

We had it fresh baked at a Lehamim bakery, in a restaurant, and more. Preserved lemons are a staple in Israel. We learned how to preserve them ourselves at Rutenberg Restaurant in Gesher, then again when we cooked with Avner Laskin. If you get a chance to eat at Rutenberg Restaurant I highly recommend it. A truly amazing experience. Back to preserved lemons, they are used as a spread, to enhance flavors, inside stuffed pastries, on top of dips, etc. A typical breakfast in Israel consists of a variety of fresh vegetable salads, cured meats, smoked salmon, labneh, breads, and more vegetables.

No one ever leaves the table hungry after a proper Israeli breakfast. Israeli breakfasts are healthy, filling and delicious, and usually offer a wide variety. Everywhere we ate had salads, fresh fruits, vegetables, labneh, and some form of breakfast casserole like shakshuka or other egg dishes. We stayed in the Bezalel Hotel in Jerusalem and had a huge spread for breakfast each morning, and the big variety, and fantastic options simply continued throughout the trip.

In other words, small plate meals with lots of options. Usually they are very vegetable heavy, and may contain fish. Hummus, Israeli Salad, and all the things you find on a breakfast menu can also be found on a lunch menu. One of my favorite spreads of Meze that had calamari, salads, veggies, labneh, hummus, and more was from Manta Ray in Tel Aviv. Amazing views of the beach and great food. A must eat spot.

I could eat that food every single day. Shakshuka is a breakfast staple in Israel. The poached eggs are served in a pan of steaming hot, rich tomato, chili, and garlic sauce. You may have tried the dish before, but every country does it a little bit differently. In Israel, the dish is served with an Israeli salad, tahini, and a piece of bread for ultimate dipping purposes. Knafeh is a Middle Eastern dessert made with a soft cheese base topped with a thin noodle-like pastry that has been soaked in a sweet syrup and rose water.

Kanafeh is made in large batches in shallow dishes, and the final product is often topped with chopped pistachios. You can find Kanafeh in markets and bakeries. Today it comes in a variety of shapes, always small, and internationally is marketed as Israeli or Jerusalem couscous. Ptitim the Hebrew word for this dish is especially popular among Israeli children and regularly served at schools and at home as part of the staple diet.
